Burners may be constructed of cast iron or stainless steel and come in a variety of designs:
- H-type burners are popular for their efficient heating design.
- U-type burners offer even heat distribution.
- Infrared ceramic burners deliver the highest and quickest searing heat great for steaks.

The diffuser separates the heat source from the food, and holds and distributes the heat. The absorbency of the material contributes to the amount of grease drippings burned off, undesirable flare-ups, and smoke generated:
- Ceramic diffusers, available in both racks and briquettes, burn cleanly and won't trap grease helping to prevent flare-ups.
- Depending on the design, these 'flavorizing grids' may eliminate some or all grease drippings and enhance the meat flavor by evaporating the juices into steam.
- Lava rocks have an irregular shape and don't hold heat evenly. They also aren't absorbent, so they tend to flare-up easily.
